This dish is packed with enough zest to make a lemon jealous and enough broccoli to make you feel virtuous (but not so much that it feels like a punishment). Plus, quinoa! Because let’s be honest, it’s the fancy grain that makes you feel like a health guru, even if you have no idea how to pronounce it.

Ingredients:
1 cup quinoa
2 cups water or vegetable broth
2 boneless, skinless chicken breasts, sliced thin
2 tablespoons olive oil
1 cup broccoli florets
1 orange, juiced and zested
1/2 grapefruit, juiced and zested
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
2 tablespoons low-sodium soy sauce (or tamari)
1 tablespoon honey or maple syrup (optional)
1 cup fresh spinach
1/4 cup sliced almonds (for topping)
Salt and pepper to taste
Instructions:
Cook the Quinoa: Rinse quinoa under cold water. In a saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all liquid is absorbed. Fluff with a fork and set aside.
Prepare the Chicken: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken, season with salt and pepper, and cook until browned and cooked through (about 5-7 minutes). Remove from the pan and set aside.
Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Then add the broccoli and stir-fry for about 3-4 minutes until tender but still crisp.
Add Citrus and Chicken: Return the cooked chicken to the pan. Add the orange juice, grapefruit juice, and zests, along with the soy sauce and honey/maple syrup (if using). Stir well to combine and heat through for another 2-3 minutes.
Finish with Spinach: Add the fresh spinach and stir until wilted, about 1 minute.
Serve: Serve the stir-fry over a bed of quinoa and top with sliced almonds for a crunchy finish.
Enjoy this warm, flavorful dish packed with immune-boosting ingredients!
