1 cup Medjool dates, pitted
150g Hazelnuts, toasted, separated
1 tsp Instant coffee (optional)
1 Tbsp Warm water (for coffee)
2 Tbsp Cocoa powder
1 Tbsp Honey
1 Tbsp Coconut oil
120g Dark chocolate (70% cocoa, high quality)
Pinch of sea salt
INSTRUCTIONS
Mix instant coffee with 1 Tbsp water (if using).
In a food processor, grind 50g hazelnuts until small pieces, but not turning to butter. Remove and set aside.
Add pitted dates to the food processor and blend until a smooth, sticky paste forms.
Add remaining nuts, coffee, cocoa powder, and honey. Blend well.
Chill the mixture in the refrigerator for 15-20 minutes, or until it's firm enough to handle.
Scoop out small portions and roll them into bite-sized truffle balls. Return to the refrigerator.
In a heatproof bowl, melt the dark chocolate and coconut oil using a double boiler (or in the microwave at 30-second intervals). Stir until smooth.
Add crushed hazelnuts to the chocolate, and mix well.
Using a fork, dip balls into chocolate, drain slightly, then place on parchment paper.
