Healing Broth
I’m always on the lookout for new soup and stew recipes, especially ones that are nutrient dense. I love this soup with its whole vegetables, spices and herbs. It’s easy to make as a broth or as a blended soup (my preference).
This recipe is from Anthony Williams’ book, “Medical Medium.” The recipe can also be found on his blog.
Busy week ahead? Looking for a pick me up after school before extracurricular activities? Batch cooking is so easy with this recipe! I either increase the ingredients by 1.5 or 2x. If I’m making for littles, I’ll keep the kelp and dulse to smaller measures, and won’t increase them when I increase the recipe.
When I make this recipe, I usually make a few changes:
Non summer months, I don’t add the tomatoes,
I like to add both the carrots and sweet potatoes (yams)
If I’m out of fresh turmeric, I’ll add dried instead.
I add kelp and/or dulse for additional minerals and to increase the nutrient density of the soup.
What you’ll love about this soup:
The ingredient list contains household items. No specialty ingredients in the main recipe. It contains your basic carrot, onion, celery combo with additional fresh herbs and spices. The garlic and ginger are best when fresh. The turmeric, although best to use fresh, can be dried.
It’s so simple to make. No muss no fuss. Chop up the ingredients, add them and water to a pot, cook and strain (or blend).
It’s spicy and warming for cold winter days. Picture a steaming mug of broth or soup on a chilly day - this is the perfect recipe to fill that vision. The ginger and chili flakes add a spiciness that warms your insides.
Ingredient Highlights:
Garlic. Garlic has been shown to lower blood pressure, regulates cholesterol, and stimulates immunity.
Ginger. Ginger has been known to aid in digestion and reduce bloating, and research suggests that it may also help to lower blood sugar levels.
Turmeric. Turmeric contains curcumin, which is a powerful antioxidant that has been shown to fight inflammation.
Parsley. Parsley has long been considered a free radical scavenger, heart protector, brain protector, antidiabetic, antibacterial and digestive aid.
Kelp. Iodine is a trace mineral and an essential component of thyroid hormones, T3 and T4 (hormones that regulate the metabolic activities of most cells and play a vital role in the process of early growth and development of most organs, especially the brain). Kelp has the highest amount of iodine of any food in the world.
Dulse. A seaweed that’s gaining popularity, with a taste reminiscent of bacon. It’s rich in dietary fibre, protein, iodine, B vitamins and potassium.
Healing Broth
Prep time : 20 minutes
Cook time : 70 minutes
Total time : 90 minutes
Servings : 3 to 4
INGREDIENTS
4 carrots, chopped or 1 sweet potato, cubed
2 stalks of celery, roughly chopped
2 onions, sliced
1 cup parsley, finely chopped
1 cup of shiitake mushrooms, fresh or dried (optional)
2 tomatoes, chopped (optional)
1 bulb of garlic (about 6-8 cloves), minced
1 inch of fresh ginger root
1 inch of fresh turmeric root
8 cups of water
Optional: Chili peppers or red pepper flakes, 1 tsp kelp, 1 tsp dulse
STEPS
Place all the ingredients in a pot and bring to a gentle boil.
Turn heat down to low and allow to simmer for about an hour.
Strain for a mineral rich and restorative broth, or leave the veggies in for a satisfying meal.
